Ingredients
Dry Ingredients:
🎄 1 cup almond flour
🎄 1/2 cup coconut flour
🎄 1/2 cup chopped pecans
🎄 1/2 cup chopped walnuts
🎄 1/2 cup coconut sugar
🎄 1/2 tbsp baking powder (gf)
🎄 1 tsp cinnamon
🎄 1/4 tsp nutmeg
Wet Ingredients:
🎄 1 1/2 cups Nibblish Mixed Berries
🎄 3 eggs
🎄 1 orange (using zest and juice)
🎄 3 tbsp coconut oil
🎄 1 tsp vanilla extract
Method:
- Preheat oven to 160°C fan-forced.
- Mix dry ingredients in one bowl.
- In another bowl, blend wet ingredients.
- Combine wet and dry ingredients, mixing well.
- Spoon batter into a loaf or cake tin.
- Bake for 60-70 minutes or until a clean skewer emerges.
- Cover with tin foil at 30 minutes to minimise browning.
- Cool for 20 minutes, then remove from the tin.
