Filling:

  • 4 granny smith apples (peeled and diced)
  • ½ cup caster sugar
  • 1tbsp lemon juice
  • ½ tsp ground ginger
  • ½ tsp cinnamon
  • ½ cup chopped Nibblish prunes

Crumble:

  • 1 ½ cup flour
  • 1 cup oats
  • ¾ cup caster sugar
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp vanilla extract
  • 230g butter (melted)

 

Instructions:

  1. Preheat oven to 180 degrees Celsius.
  2. Mix filling ingredients in a bowl and then transfer to an ovenproof baking dish.
  3. In another bowl, mix all crumble ingredients until combined.
  4. Sprinkle the crumble mixture evenly over the filling.
  5. Cook in the oven for 45 minutes, or until the crumble is golden and apples are soft.
  6. Serve with vanilla icecream.
