Ingredients
Dry ingredients:
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup chopped pecans
- 1/2 cup chopped walnuts
- 1/2 cup coconut sugar
- 1/2 tbsp baking powder (gf)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
Wet ingredients:
- 1 1/2 cups Nibblish Mixed Berries
- 3 eggs
- 1 orange (using zest and juice)
- 3 tbsp coconut oil
- 1 tsp vanilla extract
Method
- Preheat oven to 160°C fan-forced.
- Mix dry ingredients in one bowl.
- In another bowl, blend wet ingredients.
- Combine wet and dry ingredients, mixing well.
- Spoon batter into a loaf or cake tin.
- Bake for 60-70 minutes or until a clean skewer emerges.
- Cover with tin foil at 30 minutes to minimise browning.
- Cool for 20 minutes, then remove from the tin.
